Chả Lụa - Giò Lụa là món ăn ngon phổ biến trong các bữa tiệc ngày Tết bên cạnh có món canh khô qua, dưa kiệu, bánh tét... Cách làm chả lụa - giò lụa: Rửa sạch thịt heo, để ráo nước, cắt miếng nhỏ, cho vào bịch (bao) dàn thật mỏng thịt ra, càng mỏng càng nhanh lạnh.
Cho thịt heo vào tủ lạnh ngăn đá cho thịt gần đông đá, cầm ra dẻo có thể bẻ qua lại được, tốt nhất bạn bỏ thịt vào tủ ngăn đá khoảng 2-3 tiếng đem ra xay. Xay lần 1 này xay ấn máy khoảng 3-4 lần, mỗi lần quay được 4-5 vòng, bạn ngưng lại.
Lấy thịt làm chả lụa ra tô, pha 1 muỗng cà phê nước bột năng hoặc bắp, bột nở, hòa tan 2 loại bột này đổ vào thit đã xay lần 1, cho toàn bộ gia vị vào trộn đều, tiếp tục bỏ thịt vào bịch dàn mỏng thịt cho vào ngăn đá khoảng 1 tiếng.
Sau 1 tiếng đem ra xay lần 2, xay cũng khoảng 4-5 lần ấn máy xay, quay khoảng 4-5 vòng 1 lần xay… Lại lấy thịt làm chả lụa ra, bỏ vào bịch, dàn mỏng cho tiếp vào tủ lạnh ít nhất 30 phút.
Sau đó lại lấy ra xay lần 3, xay lần 3 cũng tương tự như lần 2, cũng ấn 4-5 lần máy xay và cho quay 4-5 lần vòng quay. Lấy thịt làm chả lụa ra, dùng muỗng quết qua lại chừng 5 phút.
Sau đó gói chả lụa hấp tùy ý, có thể gói lá chuối, giấy bạc… Chừng nào nước sôi thì cho vào hấp giò lụa khoảng 30 phút là được. Chúc các bạn thành công nhé!
